In searching for soup ideas, I wanted to build something around chickpeas and potatoes. Jeff always talks about how he roasts potatoes for a long time, getting a great chew and color and I wanted that as a basis for my soup. In researching I started to put a Mexican influence around it and my soup was born. Poblano peppers, roasted over an open flame, chipotle peppers in adobe sauce for heat and smoke, bottomer of rotisserie chicken for those inclined, and toppers of chives and roasted cashews. Solid basis for my soup, now I just had to make it after coming back from Orlando on Saturday.
Went to Westborn Market on Sunday morning with every intent to make my soup. Got all the ingredients, went to prep the fridge so the soup can rest there overnight, and ….. no room. I had 5 bags of salmon, freshly caught in Lake Michigan, brining for smoking…change of plans. Soup will have to be cooked on Monday after work.
On Monday we had great news! Habanero Harman will be coming! Now I have to bring my A game.
Everything came together easily, peppers roasted quickly, veg got chopped, and potatoes went into the oven for one and half hours. While everything was roasting and cooking, I chopped the chives and chicken, put them away in the fridge, and then allowed the soup and potatoes to fully cool before putting them all away for Soup Club. Took about 2 and a half hours to make the soup and all the fixings. Not too bad. Set the alarm clock to wake up early to get everything in my car…
Got everything situated at work before 7am, going to have to move Soup Club to our big conference room to accommodate all the guest. Hoping the soup is not too spicy for everyone.
And my spice fears were unfounded, it had great flavor and I would use the second can of chipotles in adobo sauce. Nothing hot sauce can’t fix and with Habanero Harman coming into Soup Club today, it made it so special. He brought all of his favorites that spiced up the soup just perfectly.

I had a ton of fun putting this soup together. Conlan added a cherry on top by taking leftovers home. Thank you Soup Club for making this the highlight of my week!
