French Onion Soup doesn’t have much it other than onions, bread, and blow torches. To that end we also had to fit in dietary restrictions for our club to honor our vegetarians. Challenge accepted. Inspired by Joshua Weissman’s recipe, we modify it to remove the beef stock and get that similar flavor back in. Welcome Porcini mushrooms and their umami flavor. 2.5 hours to get everything ready the night before and then had one of my interns volunteer to blowtorch all the soup cheese. (She formally worked at a restaurant doing the same blow torch work). Great success and Conlan took home soup, always an earned achievement for the cook!
