Tam's Watermelon Gazpacho That Shut Us Up

I’m typing this blog a week late for Tam, who brought us a dandy of a soup last week.
Not so dandy on the blog though! But hey, we have fans out there—Noah is probably pacing his kitchen wondering, “What the hell happened at Soup Club last week?!”
So here I am, retroactively recording the legend of Tam’s gazpacho before today’s meeting, where Conlan gets his chance to please.

Last Tuesday: Tam rolls in with this Watermelon & Mint Gazpacho. I was thinking: “Seriously? Not another gazpacho…” Ahh, I’d just made a gazpacho that basically shattered expectations…and who eats more than one bowl of gazpacho per year? Some people don’t even eat one in their entire lives. Even Kevin was side-eyeing the pot like: “Oh, another gazpacho…I hate cold soup!”

But then…WTF, Tam?! This gazpacho was freaking amazing. One spoonful and the entire room went from “ugh” to “holy shit, pass me another ladle.” I was planning on one bowl.
I had two. Might’ve had three if I didn’t have to pretend to be a responsible adult.

Ranking time:

• Kevin came in loud and proud with a 9.5 out of 10, maybe the best score he’s ever handed out. He even started talking about how he was going to make it for his wife!

• I went with an 8.5 or 9, but don’t quote me because I was in a food coma and just don’t remember!

• Andy and Conlan, honestly, I can’t remember what they rated it. Let’s just say they liked it. A lot.

And now, here we are, one week later, getting ready for Conlan’s turn…and then our calendar is about to get weird…After today, Andy’s out next week, so August 12th is canceled. August 19th, we have a big work event, so no Soup Club then either. We’re looking at August 26th for the next meeting.

Andy’s up, but the real question is: Will it actually be Andy at the stove like last time, or will Justy swoop in (again) to save the day…or will Justy finally accept her destiny, join the club, and block Tuesdays off on her calendar once and for all?

Stay tuned, today, we feast on Conlan’s creation (although he submitted his blog before the meeting – not sure how he’s predicting what’s gonna happen?) Next time, we may be witnessing the dawn of the Justy Era. Or should this be the ending of Conlan’s blog and not Tam’s that I’m typing up…I’m sooooo confused!
