When Life Gives Kevin Lemons…Soup Happens!

So my wife loves chicken lemon rice soup at local coney islands which gave me the inspiration to make at traditional version of this soup for Soup Club. I made a test run, which I enjoyed and my family did not. They prefer the version from the coney islands.

It’s a simple soup, finished with an egg yolk/lemon juice combo, to give it creaminess and that acid flavor. Not for everyone, as we will see, and something that was calling for me to make it.

Trip to Westborn to get the lemons, veggie stock, chicken, and eggs. I had all the other ingredients.

Came home on Tuesday, did some robotics tasks per usually, and then got to making the soup. Chopping up the veggies took the longest, paired it with a nice Czech Pilsner made in Michigan. Got the soup cooking, prepped the meats into separate bowls as a Bottomer™, cracked the eggs into a bowl, and freshly squeezed lemons into a separate bowl as well. Figured I would combine everything at work before Soup Club begins.

On to Soup Club!

We had a special guest, Jeff DiMatteo flew in! I think just for Soup Club, and maybe something on the west side of Michigan.

Feelings were mixed. Some didn’t like the lemon flavor; one didn’t like the creaminess and lemon flavor. I get it, it has a unique flavor profile. Overall a score of 7.88 makes me perfectly happy. I made a soup I like, shared it with friends, and get to have leftovers.

Now we need to figure out if you need to submit your withdrawal from Soup Club in paper with a signature as Andy decided to finally go on a break with us….
